How is this free with no limits?

Because your device does the computation. There is no GPU bill to pass on, so there is no usage cap and no reason to collect your files.

Why did it miss part of my subject?

The model is tuned for people, products, and animals against reasonably distinct backgrounds. Transparent, reflective, and very fine-detailed subjects are genuinely hard — use the refinement brush to correct the mask by hand.

What format should I export?

PNG, because it supports an alpha channel. Exporting to JPG would flatten the transparency against a solid colour, defeating the purpose.
